At Kisin, Chef Umetani uses his many years of experience to determine the seasonal climate, temperature, humidity due to rain, and other factors.
He then makes slight changes to the mixture, kneading method, and the degree of beating to create our signature handmade udon noodles, which we present to our customers morning, noon, and night.
Unlike machine-made uniform udon noodles and restaurants, we put our heart and soul into making udon noodles so that our customers can enjoy the best taste under the conditions of the day.

Thé restaurant KISIN will be closed during December 21th 2024 to January 6th in lunch time 2025.
