At Kisin, Chef Umetani uses his many years of experience to determine the seasonal climate, temperature, humidity due to rain, and other factors. He then makes slight changes to the mixture, kneading method, and the degree of beating to create our signature handmade udon noodles, which we present to our customers morning, noon, and night.
