In Paris, the world capital of gastronomy, we remain true to a sincere and uncompromising approach. As artisans of handmade udon, we reject the use of machines to preserve the unique, traditional craft of hand-kneading and hand-cutting our noodles. This April, we are also proud to celebrate our 10th anniversary.

Chef Umetani is dedicated to offering every guest from around the world the authentic taste of handmade Japanese udon. Moving against the modern trend of speed and efficiency, we continue to devote the necessary time and care to preparing additive-free broths, noodles, and dishes.
